Nothing very exciting to start this Blog, just yesterday's lunch!
Tomato Avocado Cheese Salad
- 1 large, red, Fresh from the Garden Tomato
- 1 Avocado - just ripe, not too mushy (use the mushy one for guacamole)
- 1/2 Lime, juiced (use the other half to flavor your ice tea)
- 1/3 cup finely diced Pasilla pepper, or Jalapeno if you want more spice
- 1/3 cup finely diced Walla Walla Sweet Onion
- 1/4 cup Smoked Gouda cheese, cut in 1/2'" cubes
- 2 T olive oil
- 1 T white balsamic vinegar
- 1/4 cup fresh cilantro or basil, minced
- pepper (to your taste)
- salt, to taste and if your diet allows it, or substitute Mrs. Dash
Whisk together the olive oil, balsamic vinegar, herbs, and seasonings
Add pasilla, onion, and cheese
Mix thoroughly so that each piece is well coated and separated
Add tomato and avocado, Toss gently
Serve over leaves of chilled romaine lettuce
Optional: Top with smoked tofu, chicken, or anything else that sounds good to you.
Hint: The lime is easier to juice if you microwave it for 15 seconds before you cut it.
